About
Michael Hall worked in Burgundy before settling in the Adelaide Hills, and his Chardonnay shows it: restrained, savoury, finely judged. White peach, lemon, hazelnut. A genuinely cerebral Chardonnay.
Michael Hall came to wine in mid-life. He spent two decades valuing jewellery in Switzerland, then retrained in wine science and released his first vintage under his own name in 2008. The name Sang de Pigeon, or pigeon's blood, is the jewel trade's term for the colour of the finest rubies. Before going out on his own he worked at Domaine Leflaive and Meo-Camuzet in Burgundy, and at Cullen and Giaconda in Australia.
The fruit is hand picked from two Adelaide Hills sites, in Lenswood and Piccadilly. Hall ferments it on wild yeast in French oak barrels and matures it on lees. Open it now with roast chicken or mushroom risotto, or give it a few years in the cellar.
