About
Sylvaner from the Alpine north — a grape rarely seen this well-made. Crisp green apple, pear, mountain herbs, clean mineral spine. Made by the Augustinian monastery winery in Bolzano.
Sylvaner likes altitude, and Muri-Gries grows it at around 500 metres on high sites running toward the Isarco Valley. That is the cool, stony edge of Alto Adige, and the grape keeps its nerve there.
The cellar itself is the story. The site at Gries has been monastic since the 1300s. Benedictine brothers from Muri in Switzerland took it over in 1845 and brought their viticulture with them. The wine is made inside the monastery walls, fermented and aged in stainless steel with nothing added for effect.
The abbey suggests serving it at 12 to 14 degrees, a touch warmer than straight from the fridge. It suits fried fish and mature cheese as well as the obvious seafood or a spring risotto.
