About

Fino sherry — bone-dry, pale, lifted by flor (the layer of yeast that protects the wine during ageing). Almond, salt, fresh bread. Drink it cold with olives, jamón or fried fish. The most refreshing dry aperitif in the world.

Most of Valdespino's vineyards sit on albariza, the chalky white soil that Jerez growers rate above all others. The vineyards climb the high ground around Jerez de la Frontera. Valdespino still ferments in old oak barrels rather than steel tanks, one of the last sherry houses in the region to do it that way.

The bodega traces back to 1264, when King Alfonso X granted land here to the knight Alfonso Valdespino. That was not long after the Reconquista reached the town. The wine develops under flor, a living layer of yeast that forms on its own. It shields the wine from air while it slowly builds character in barrel.

Keep it in the fridge and pour it properly cold, the way it is drunk across Jerez. It sits well beside olives, jamón or fried fish, and earns its place as a pre-dinner glass on its own too.

Valdespino is one of the oldest sherry houses in Jerez (history dating to 1264).
