The name is a true story. Sir Henry Galway was South Australia's governor from 1914 to 1920. On his winery tours he tasted fortifieds from 500-litre barrels called pipes. The barrel he liked best was inscribed "Galway's Pipe" and kept for Government House. The brand still blends to that standard, with winemaking now based at Langhorne Creek.
The wine spends an average of twelve years in oak. That slow stay turns fresh grape into raisin, dried pear and grilled nut. A toasty edge comes off the barrel, and there is enough acid to keep the sweetness honest.
Serve it in small pours at cellar temperature or just below. An open bottle keeps for weeks, so there is no rush to finish it. Cheese is the classic match, blue above all.
