About

Amontillado starts as Fino under flor, then loses the flor and ages oxidatively — picking up nuttiness and wood character while keeping a dry, savoury core. Hazelnut, almond, salt, soft wood. Pours alongside cured meats, mushroom dishes, hard cheese.

Gutiérrez Colosía sits at the mouth of the Guadalete river in El Puerto de Santa María, a few blocks from the Atlantic. The family has made sherry here since 1838 in high-arched cellars built like cathedral naves. Damp sea air keeps the flor yeast active all year round, and every cask in the house picks up a trace of salt from it.

The wine is 100 per cent Palomino. It spends several years as a Fino under flor, then loses the veil and keeps ageing in old casks through the solera. The blend averages about ten years old, fortified to 18 per cent and still bone dry.

Serve it chilled, not iced. The bodega pours it as an aperitif, or beside soups, tapas and cold cuts.
