About
Oloroso is the fully-oxidative dry sherry style — no flor protection, just slow oxygen ageing for years in cask. Walnut, dried fig, leather, salt, long savoury finish. Pour with hard cheese, mushroom dishes, slow-cooked meats.
Gutiérrez Colosía is the sherry house at the mouth of the Guadalete river in El Puerto de Santa María. The family has run the bodega since 1838, ageing wine in tall arched cellars a few blocks from the Atlantic. They sold to other houses for generations and only began bottling under their own name in 1997.
Oloroso starts from fuller, weightier musts than Fino, often from a second pressing of Palomino. Cellar masters chalk a circle on the casks chosen for it. Fortification to 17 or 18 per cent kills any chance of flor, so oxygen works on the wine from day one. Evaporation through the staves concentrates what remains as it moves down the solera.
Serve it between 12 and 16 degrees, cooler than the room. Pour small glasses and take it slowly.
