About
Pedro Ximénez from Sánchez Romate — sun-dried PX grapes give the most concentrated, syrupy-sweet style of sherry. Raisin, fig, dark caramel. Pour over vanilla ice cream and you've sorted dessert.
Sánchez Romate has made sherry in Jerez since 1781, and it is one of the few bodegas in the region still under independent family ownership. The house also distils Brandy de Jerez, so long patience with oak runs deep here.
The sun-drying happens on esparto grass mats, where the grapes shrivel for up to three weeks before pressing. The small amount of juice left goes into oak casks for long ageing. That time builds flavours of creamy raisin, espresso and dark chocolate over a velvet texture.
Serve small glasses, lightly chilled, after dinner. Blue cheese is the classic savoury match when dessert feels like too much.
