Sam Connew models this blend on Passe-tout-grains, the old Burgundian habit of bottling Pinot Noir and Gamay together. The Pinot comes from a small vineyard outside Richmond. The Gamay comes off a young block she planted in 2021 at her own Palisander vineyard in Tea Tree.
The Gamay sits ten days in whole berries under carbonic maceration, which pushes the fruit towards brightness. Wild yeasts run the ferments, and the finished blend rests six months in older French oak puncheons, so nothing muffles the fruit.
Expect cherry and red berries with a twist of spice. Open it within a year or two of release. It suits relaxed weeknight food far better than a formal table.
