About
Brendan and Laura Carter's Sangiovese out of the Clare Valley — Italian variety, Australian dirt. Bright cherry, herbal lift, soft tannin. Made for pasta, mess, and good times.
Brendan and Laura Carter grow this fruit on red clay loam over shale, ground that keeps yields low and flavour concentrated. It's a change of variety for the label. Their Adelaide Hills Nebbiolo gave them nothing in 2023, so they leaned on Sangiovese from their Truffle Hound blend, a grape they already knew well.
That switch was not a compromise. Sangiovese suits pasta better than most reds anyway, and the fruit had already proven itself before it got a bottle of its own.
Serve it at cellar temperature rather than cold, and open it half an hour before the pasta goes on. It wants tomato sauce, pizza, or a charcuterie board to work against its tannin.
