About

Pet-nat rosé from Denmark's Brave New Wine: mostly Sauvignon Blanc with a splash of Shiraz off organically farmed Great Southern vineyards. It ferments naturally in tank with no additives and goes to bottle near the end of ferment, so the fizz is all its own — undisgorged, frizzante, bright pink under a crown cap. Raspberries, strawberries and pink grapefruit with a spicy lift; tart, fruity and herbaceous all at once.

Producer note

Brave New Wine is the wife-and-husband project of Yoko Luscher-Mostert and Andries Mostert, chasing tiny volumes of high-quality fruit from the Great Southern and making lo-fi, minimal-intervention wines — no fining, no filtration, and little to no sulphur.

Pinot noir leads this Tasmanian sparkling rosé — 77% with 23% chardonnay — handpicked at Pipers River and the Tamar Valley and gently whole-bunch pressed. Bottle fermentation and a minimum of eighteen months on tirage build fresh brioche over strawberries, rose petals and a lift of Turkish delight, the pale salmon colour carrying a fine persistent bead into a rich, creamy palate that still finishes dry and vibrant.

Sparkling Pinot Noir from a single Langhorne Creek block of 27-year-old MV6 vines on red alluvial sandy loam, machine-picked in the cool of the night and pressed gently to catch the grape's natural salmon blush. Fermented dry, low and slow at 13 degrees, then held in tank around six months and bottled with a light 5.5 g/L dosage and minimal finings. Red apple, white strawberry, yellow nectarine and grapefruit rind on the nose; zippy, sherbet-like acidity carries Turkish delight, rhubarb and dehydrated orange. Vegan friendly.

Pale pink with a fine, persistent bead: strawberry, raspberry, grapefruit and green apple with roasted almond and brioche behind, crisp acidity against a touch of gentle sweetness, finishing dry.
