About

Crémant de Bourgogne from Nuits-Saint-Georges specialist Louis Bouillot, blending Burgundy's four varieties — Chardonnay, Pinot Noir, Aligoté and Gamay — and made méthode champenoise with at least 12 months on lees. Pale yellow with green glints, the red-berry side of Pinot and Gamay (redcurrant, blackberry, cherry) meets white flowers — elderflower, lime blossom, honeysuckle — before a fresh, direct palate that balances roundness against citrus liveliness.

Producer note

Louis Bouillot was founded in 1877 by Jean Bouillot and is a specialist Crémant de Bourgogne house based in Nuits-Saint-Georges, now run by Jean-Claude Boisset, drawing on sites across the Côte d'Or.

Sparkling rosé built on Grenache and Cinsault vinified by direct pressing, joined by Pinot Noir, from vines on limestone soils. The base wine rests in stainless steel tanks before the prise de mousse puts the fizz in the bottle. Fresh red fruit leads — raspberry and wild strawberry — over pomelo citrus and white flowers, with a delicate peach core and crisp, fine bubbles. Best served well chilled, between 5 and 7 degrees.
