Cloudy from natural lees, bone-dry, with bready complexity from bottle fermentation. Apple, lemon, yeast, fresh bread. Nothing like the sweet supermarket version — this is the original.
Brothers Ubaldo and Fabiano Baldi started their winery in 2005 at Ogliano, in the Conegliano hills of Treviso. Wine runs three generations deep in the family, back to the grappa distillery their grandfather opened in 1938. The estate's production is certified organic.
'Fa Ben' is their col fondo, made the way farmers here bottled Prosecco before tank fizz took over. It stays on its sediment in the bottle, unfiltered and undisgorged. The name means 'with the bottom'.
Stand the bottle upright a day ahead for a clearer pour, or turn it gently first to rouse the sediment if you like it rustic. Serve it cold with pizza, salumi or fried vegetables.
