About

Pinot Noir-led traditional-method rosé from the Yarra. Bone-dry, cherry-driven, structured. Drinks like a Champagne rosé at half the price — Dominique Portet brings real French Champagne heritage (his family worked at Veuve Clicquot).

The fruit comes off two vineyards in the Upper Yarra at around 250 metres, from vines now 25 years old. Cool nights at that height hold the acidity a sparkling rosé lives on. The current base is 55 per cent Pinot Noir and 45 per cent Chardonnay, hand-picked, with 15 per cent reserve wine reaching back to 2013 for depth.

It is made the slow way. The second ferment happens in this bottle, followed by at least 24 months resting on lees before disgorgement. Dosage is a restrained 5 grams per litre, so the finish stays taut and savoury.

Rose petal and wild strawberry lead, with a mineral line running through the finish. The winery pours it beside rock oysters, and they are right. A side of salmon works just as well.

Dominique Portet has French Champagne heritage (his family worked at Veuve Clicquot) and brought that expertise to the Yarra Valley.
