About

Blanc de blancs from Margaret River chardonnay, made méthode traditionnelle in Idée Fixe's purpose-built sparkling facility — one of only a handful in Australia where every step from grape to labelling happens on site. Pale yellow with a persistent fine bead, it opens on ocean sea spray, coastal rosemary, lemon rind and crisp apple with a nuance of patisserie, then runs mouth-coating citrus acidity into a quenching, salt-flaked finish.

Clover Hill's multi-vintage Exceptionnelle blends 59% Chardonnay, 35% Pinot Noir and 6% Meunier from the estate's Lebrina vineyard in Tasmania's Pipers River country, with reserve wines kept under four different preservation techniques to layer in complexity. Light straw-green with a fine, energetic bead; citrus and stone fruit aromas run to lemon curd, red apple, crushed sea shell and almond paste, and the palate is tight and bright with a stony, savoury edge and a long, dry finish. Drink now or cellar five to ten years.

A crisp, brut-dry Blanc de Blancs made entirely from Chardonnay grown on an elevated, exposed site in South Australia's Fleurieu Peninsula. Made using the Charmat (tank-fermented) method rather than traditional bottle fermentation, it carries a fine, persistent bead, plenty of regional minerality and a tangy green apple and lemon character with a touch of orange blossom. Built to be poured young and chilled, not cellared.

Pinot noir leads this Tasmanian sparkling rosé — 77% with 23% chardonnay — handpicked at Pipers River and the Tamar Valley and gently whole-bunch pressed. Bottle fermentation and a minimum of eighteen months on tirage build fresh brioche over strawberries, rose petals and a lift of Turkish delight, the pale salmon colour carrying a fine persistent bead into a rich, creamy palate that still finishes dry and vibrant.
