About

Anton van Klopper's take on Savagnin from the cool of the Adelaide Hills: wild fermentation, ageing in neutral vessels, and nothing added at any stage — not even sulphur at bottling. Green apple, ripe pear and citrus peel sit over beeswax, crushed herbs and a briny, coastal minerality, with almond skin and gentle spice on a dry, finely grippy finish. A subtle oxidative touch gives it a wild aromatic edge while the variety's signature acidity holds the structure.

Producer note

Van Klopper finished his oenology degree at the University of Adelaide in 2001, bought a cherry orchard in Basket Range the next year and made his first estate vintage in 2007. A founding member of The Natural Selection Theory collective, he farms biodynamically at around 400 metres and works with no temperature control and no additions — the wines are entirely sulphur-free.
