About
Most Australian Viognier goes blowsy. Orange's altitude keeps this one bright, lifted, properly poised — the way Viognier should be.
The fruit is grown at Ikigai Farm in the Central Ranges near Orange, around 600 metres up on the slopes of Mount Canobolas. Nights stay cold there even in the middle of summer, and that swing between warm days and cold nights is what keeps the acid in check while the grapes ripen.
Elliot and Jackie Paradoxa farm the block organically and go past what certification requires, skipping the copper and sulfur sprays most organic growers still use. Sheep graze the cover crops between rows, building the soil instead of feeding it from a bag.
Pour it cold but not fridge-cold, and put it next to roast chicken or pork. It is built to cut through fat rather than compete with it.
