About
Citrus, stone fruit, oatmeal-like fine oak. The modern Australian Chardonnay style done well — not big, not skinny, properly judged.
The fruit grows on grey loam over clay on the slopes below the Warramate Hills, the same vineyard that gives the estate reds. Every Chardonnay clone on the property goes into the blend, and that is half the point. Each clone ripens a little differently, and together they cover more ground than any one could.
In the winery the approach is quiet. Wild yeast, fermentation in barrel, mostly older French oak, then a stretch on lees for texture. Part of the malolactic conversion ran through, enough to soften the acid line without blurring it.
Pour it with roast chicken tonight, or give it four or five years to turn nutty and savoury.
