Verdejo from high-altitude vineyards in central Castile, where sunny days and cool nights keep the fruit intense and fresh. The vineyards are organically farmed as part of an integrated ecosystem studded with centenary oaks — low rainfall means low disease pressure, so no fungicides, and only organic manure has ever fed the soil. Fresh cut grass, fennel and white pepper lead into a dry, refreshing palate with excellent balance and a subtly mineral, persistent finish.

A 100% Riesling from the Rheingau's steep, south-facing slopes, made in the region's classic off-dry register. Green apple, ripe peach and citrus zest lead, with juicy stone fruit, lemon and a touch of honey on the palate over the subtle minerality the Rheingau is known for. Hand-harvested fruit is softly crushed and fermented slowly in temperature-controlled stainless steel, then settled on its lees for two months before bottling, keeping the whole thing clean and fresh.
