About

A 0.0% wine alternative from NON in Melbourne, made with Tasmanian raspberries, chamomile and verjus. NON builds its drinks from produce instead of taking the alcohol out of wine. Sweet and salty in balance, and it reads as a dry rose at the table.

The base is verjus, the juice of unripe grapes, pressed from Semillon grown in the Barossa Valley. Raspberries from Tasmania are freeze dried, which pulls most of the water out and concentrates the fruit. They then sit in a cold steep for two days.

Chamomile does the job tannin does in a wine. It gives the drink grip and a floral finish, and a pinch of Murray River salt lifts the fruit rather than reading as salty. Verjus carries the acidity and a little sugar sets the balance at the end.

Serve it properly cold in a wine glass, between two and six degrees. It holds its own beside cured meats, antipasti or a citrus heavy salad.

Producer note

Aaron Trotman started NON in 2019 after a run of restaurant meals in London where the drinkers got a considered pairing and the non drinker got something sweet and forgettable. His background was cosmetics chemistry rather than hospitality.
