Lemons cooked down with hibiscus, lemon verbena, lemongrass and peppermint, then dry hopped for grip. It is lightly sparkling, finishes dry and carries a cool menthol lift you rarely get in an alcohol free drink. Number five in the NON range and the one to reach for in warm weather.
The acidity comes from verjus, made with Semillon from the Barossa Valley that is pressed while the grapes are still green. Around it sit lemons, lemon myrtle, lemon verbena, lemongrass and hibiscus, with liquorice root underneath for a little earthy sweetness.
Eclipse hops go in dry, the way a brewer adds them, and they carry the grip a wine gets from tannin. Salt from the Murray River fills in the savoury side. A small amount of sugar sets the balance last, and a glass lands under four grams of total sugar.
There is a light sparkle, so keep the bottle properly cold and pour it into a wine glass at two to six degrees. It was built to sit beside food, and grain salads, a South East Asian curry or stewed lamb and chickpeas all work.

NON works out of a kitchen in Cheltenham, in Melbourne's south east, staffed by chefs, food scientists, bartenders and winemakers rather than a production line. Every ingredient is cooked, roasted, steeped or dehydrated on its own before anything gets blended.
