The aromatic white in the NON range, at 0.0%, worked up from dehydrated orange, Japanese yuzu and cinnamon. Nothing in the bottle has been fermented. Bright and tart on the palate with a savoury undertone.
Acidity comes from verjus. It is pressed from Semillon picked green in the Barossa Valley. That gives the drink the sour line a white wine would get from its own grapes.
Oranges spend two days in a dehydrator, which caramelises them and deepens the flavour. The pith is infused for five hours for bitterness, and the skins leave a waxy feel across the tongue. Cinnamon and orange skin together supply a grip that lingers after the sip. Yuzu sits on top as the sharp citrus note and salt from the Murray keeps the whole thing savoury.
Drink it cold in a wine glass. Oysters and fresh seafood are the obvious call, and it does just as well with miso glazed vegetables.
Producer note
NON works out of its own plant in Cheltenham, in Melbourne's south east. The team running it is chefs, food scientists, bartenders and winemakers, and every ingredient is cooked, steeped or dried on its own before anything is blended.
