Roasted agave and lemon for a margarita without the tequila

About

A blanco tequila alternative at under 0.4 per cent alcohol, meant for the shaker rather than a shot glass. Lemon and roasted agave do most of the talking, with chamomile, a saline note and a peppery finish behind them. Lyre's says outright it is not for drinking neat.

Agave syrup sits in the blend alongside natural essences and extracts. The roasted note comes from that rather than from any cooked agave heart. There is salt on the ingredient list as well, which turns up as the saline edge under the citrus.

Because it is built as the base of a mixed drink, the lemon and agave stay forward and the spice lands late. The finish is peppery and mouthwatering, so the drink keeps some grip once it is diluted.

Shake it hard with lime and a little orange over plenty of ice for a margarita. Lengthen it with grapefruit soda and salt the rim for a paloma. Both want to be properly cold and both want fresh citrus rather than cordial.

Producer note

Lyre's works by sourcing natural essences, extracts and distillates from around the world and blending them to shadow a classic spirit. The range now runs to more than a dozen bottles, enough to cover most of the cocktail list without alcohol.
