Mesta comes from Bodegas Fontana in Uclés, on the high plains of Castilla south-east of Madrid. Two Masters of Wine, Andreas Kubach and Sam Harrop, run the operation. Their stated aim is wine that drinks well above its price. The estate farms around 600 hectares of its own vineyards without pesticides.
The climate does the flavour work. Hot, sunny days ripen the fruit and cold nights keep it fresh. In the winery the wine ferments in stainless steel with about a week on skins, then rests in tank rather than barrel. No oak is involved at any point.
Give it a light chill and open it with whatever is on the table. Tinned Spanish fish, a chorizo roll, pizza. It fits all of them.
