100% Espadín aged 4 months in American oak. Oak ageing softens the smoke and adds vanilla, caramel and rounded sweetness. The mezcal that broke through to bartenders globally — Illegal built its reputation on a smuggled-into-NYC origin story and serious quality in the bottle.
The mezcal is made in the Tlacolula valley of Oaxaca, where the espadín agave is grown, roasted and distilled. Master distillers from the Hernandez family run production, working in the small-batch palenque tradition rather than at industrial scale.
In the glass, the smoke stays polite. It leans toward dried chipotle and tobacco rather than campfire, with roasted agave and orange coming through first. The barrel time shows as a rounded, settled texture that suits slow drinking.
Pour it neat in a small glass and take your time. If you mix, keep it simple. It makes a fine mezcal Old Fashioned, where the barrel notes and the sugar meet halfway.
