About
Made by Melly Barajas in the highlands of Jalisco — one of the few female master distillers in the tequila industry. 100% Blue Weber agave, additive-free, aged 8 months in second-use American whiskey barrels. Pale, restrained, savoury — cooked agave, citrus, white pepper, gentle oak. The opposite of vanilla-bomb commercial reposado.
The distillery sits in Valle de Guadalupe, in the Jalisco highlands, and women run every stage of production under one roof. Barajas also waits for her agave. The piñas arrive at eight to ten years old, grown in the iron-rich red soil nearby.
Production stays slow and simple. The agave steam-cooks in earthen ovens for a full day, then rests for another before crushing. Fermentation happens naturally in open steel vats, at whatever pace the local air temperature sets. The barrels get refilled so many times they give up almost no colour, which is why the spirit pours so pale.
Sip it neat first. If you do mix it, keep the drink simple so the agave stays in front.
