About
Carricante from the volcanic slopes of Mount Etna — high altitude, mineral cut, electric acidity. Lemon, white flowers, smoke, long saline finish. Etna Bianco is one of Italy's most exciting white wine categories — Calcagno is at the front of it.
The vines sit at 850 metres on Etna's eastern slope, in ground that is volcanic sand and mineral rock rather than farmed topsoil. They are around forty years old. Vines that age, on ground that drains that fast, carry small crops and thick skins. Altitude does the rest. Nights stay cold on the volcano through a Sicilian August, so the fruit holds its acid while it ripens.
Calcagno ferment in stainless steel under controlled temperature and leave oak out of it entirely. That is a deliberate call for Carricante. Nothing sits between the grape and the ground it grew in. That is why the wine reads as smoke and salt before it reads as fruit.
Serve it properly cold. It keeps opening for an hour, so do not rush the bottle.
