About

Twelve months in French oak of varying ages, with natural malolactic fermentation, gives this Yellow Label Chardonnay its classic buttery, creamy Hunter Valley style. Cinnamon-poached white peach and crushed roasted cashew lead into a stewed-nectarine mid-palate framed by perfumed French oak, and this vintage carries more energy and better-balanced acidity than earlier releases.

Producer note

A family-owned boutique winery in the Hunter Valley, one of Australia's oldest continuously producing wine regions. Jerome Scarborough has been with the winery for 25 years, a connection rooted in his childhood in the Hunter Valley, and the family treats winemaking as a way of life rather than just a business.

Half is fermented in stainless steel and half in barrel with malolactic fermentation and traditional batonnage, then the lot rests sur lie for eight months. Bright citrus, fresh apple and white jasmine on the nose give way to stone fruit, vanilla and clove with warm spice and a touch of oak-derived toastiness — balanced between fruit and barrel, welcoming rather than heavy.

Spring Seed Wine Co (Battle of Bosworth)

A McLaren Vale chardonnay named 'Four O'Clock', night-picked to preserve natural acidity and fermented cool in temperature-controlled stainless steel. Part of the ferment is left on solids for texture, and about a third of the wine spends six months maturing in seasoned French hogsheads, giving a gentle toasty edge without masking the fruit. Expect stone fruit — nectarine and peach — with lime and a touch of green apple, finishing crisp and zesty. Grown organically on the Bosworth family's own McLaren Vale vineyard.
