100% Chardonnay, no oak. Lemon, green apple, that unmistakable Chablis oyster-shell minerality. The benchmark expression of unwooded Chardonnay, from one of Chablis' most respected names.
Michel Laroche ran Domaine Laroche, one of the region's big houses, for decades. In 2010 he returned to his family's old vineyards and founded Le Domaine d'Henri, named for his father. He runs it with his wife Cecile and children Margaux and Romain. This label is the family's Chablis from estate fruit and bought grapes, all certified organic.
The winemaking stays out of the way. The juice ferments on indigenous yeasts in temperature-controlled stainless steel and goes to bottle within a year of harvest. Chill it hard and open it with oysters, sushi or goat's cheese. Drink it young, while it still has all its snap.
