The Fleury family were the first biodynamic estate in all of Champagne, working in the Côte des Bar — closer to Chablis than to Reims. 100% Pinot Noir. Baked apple, brioche, almond and warm spice. More texture and depth than the tighter Côte des Blancs styles up north.
The Fleury family farms 15 hectares at Courteron, their village in the far south of Champagne. Jean-Pierre Fleury began converting the vines to biodynamics in 1989 and had the whole estate farmed that way by 1992, more than a decade before the practice caught on around the region.
The Blanc de Noirs is the house's oldest cuvée. Robert Fleury first made it in 1955. Each release blends the newest harvest with older wine from the family's perpetual reserve, kept in large oak casks. It then ages about four years before disgorgement. That reserve wine carries flavour from many past harvests into every bottle.
Open it with dinner rather than saving it. Roast chicken or charcuterie suit it, and aged gruyère suits it even better.
