Shiraz-led with Cabernet and Touriga Nacional — dark fruit, spice, bubbles. The Australian festive-season classic, no apologies.
The base wines are Shiraz from McLaren Vale and the Adelaide Hills, matured in French oak before the wine takes its bubbles. Duane Coates holds barrels back from his classification tastings each year, so older reserve material deepens every release. Small parcels of aged Cabernet round out the blend.
Residual sugar sits at 21 grams per litre, the traditional sparkling-red balance. That touch of sweetness carries the tannin without ever reading as a sweet wine. Expect raspberry and plum cake over dark earth, cardamom and a hint of toast. It is made with minimal additions and no animal fining products, so it is vegan-friendly.
Serve it properly cold, straight from the fridge. It will hold in the cellar to 2030, but the Christmas ham rarely waits that long.
