About
Light-bodied Sicilian red from 100% Frappato, fermented on skins with wild yeast and aged in concrete, so there is no oak in the way. Red cherry, raspberry and plum sit over garden herbs, damp earth and a pinch of pepper, with bright acid and soft, pliable tannins. Organically grown on red limestone soils at 230 metres above Vittoria. Give it a slight chill and it drinks like a summer red that still has something to say.
Producer note
COS was founded in 1980 by three friends — Giambattista Cilia, Giusto Occhipinti and Cirino Strano — whose surname initials spell the name. They have never used synthetic treatments in the vineyard, began biodynamic practice in 2000 and were certified organic in 2007. Occhipinti is widely credited with reviving the Vittoria appellation.
