Pinot Noir leads this blend at about two thirds, with Chardonnay making up the rest. Dosage sits below two grams per litre, so almost no sugar softens the finish. In some markets it even carries the Extra Brut label.
The wine rested for around nine years in the house's chalk cellars before release. That long rest, rather than sweetness, gives it depth. Expect fresh pineapple and greengage among the fruit as it opens in the glass.
Serve it just off cellar temperature. Langoustines or turbot sit well beside it, but so do the people you saved it for.
