About
Lime, citrus blossom, mineral notes with razor-sharp acidity. The Silkmans are known for collecting trophies with their Hunter whites — and this is why.
This blend draws on three Pokolbin vineyards: Brokenback and Blackberry each contribute 40 percent, Murphy the remaining 20. Hunter growers had a hard run into 2023. La Niña brought wet weather and downy mildew pressure into October. The Semillon crop hung on through summer and came in late, under cool, clear February skies after Australia Day.
Liz and Shaun Silkman founded the label in 2013. They still run it as a small operation, working the best Hunter fruit in tiny parcels. This wine gets a stretch of post-ferment lees maturation, the technique that gives a bone-dry white its weight and texture. Liz was named Halliday's Winemaker of the Year in 2025, the first winemaker from the Hunter to take that title.
Serve it cold, straight from the fridge, with oysters or a plate of sushi. It is built to sit next to clean, sharp seafood rather than compete with it.
