About
The Hunter doesn't shout 'Cabernet country' — Margan makes it work. Cab Sauv + Cab Franc + Merlot in a more elegant style than typical.
Margan farms at Broke Fordwich, the quieter western side of the Hunter, and grows everything on its own vineyards. Ollie Margan, third generation, makes the wines. Cabernet Sauvignon from the volcanic clay of the Saxonvale vineyard leads the blend. Cabernet Franc and Merlot come from red volcanic soil at Ceres Hill.
The winemaking keeps its hands off. The fruit is destemmed and fermented gently in one-tonne fermenters over about ten days. The wine then spends six months in seasoned French oak puncheons, older barrels that give texture without oak flavour.
Expect cassis and violets over fine, slightly chewy tannin. Pour it with roast lamb tonight, or tuck it away for a few years and let it soften.
