Hernö makes this the slow way. The distillery, in Dala on Sweden's High Coast, steeps organic sloe berries in its own gin for three months. A measure of local honey balances the tartness of the fruit. The result pours a deep ruby colour.
It drinks like a Scandinavian answer to the English hedgerow classic. Expect plum, cherry and dried apricot over the juniper, with a finish that stays a little sour rather than syrupy. That sourness is the point. It keeps the glass refreshing.
