Walcher makes this limoncello from organic, sun-ripened lemon peels grown in Sicily, macerating peel only rather than juice or whole fruit. It sits lower in both sugar and alcohol than most limoncello on the shelf, at 25% ABV, which keeps it tasting fresh rather than syrupy.
Alfons Walcher set up his first still at Turmbachhof, the family farm near Appiano, in 1966. The property was already nine generations deep in Walcher hands by then. His sons Theodor and Matthias run the distillery today, still working with organic fruit and traditional methods. It is the same approach behind the rest of the Walcher range.
Keep the bottle in the freezer rather than the fridge. Limoncello never fully solidifies at sub-zero and holds its aroma far better cold than at fridge temperature. A small glass after a meal is the classic pour.
