Cosmo Brewing works out of the Old School Brewhouse in Locksley, near Bathurst, using local, seasonal ingredients and organic NSW grain. This saison starts life as their regular house base.
The beer spends six months in a single whisky barrel from Bathurst Grange Distillery. It then goes back into tank to referment on ripe Santa Rosa plums from Emu Swamp, near Orange. It's bottled unfiltered and unpasteurised.
Pour it like a still red wine, in a wine glass rather than a pint glass. It suits a steak or anything off the grill.
