Unaged Espadín mezcal — Espadín is the most common agave variety, faster-maturing than the wild ones. Bright, clean, lightly smoky — a polished, approachable expression. The mezcal that converts mezcal-curious customers without scaring them off.
This mezcal is made in Tlacolula de Matamoros, Oaxaca, by mezcalero Doroteo Garcia, using Espadín agave grown on the surrounding hills.
The agave hearts roast for days in an underground stone oven fired with ocote pine, holm oak and peppertree wood. Doroteo crushes them with a stone tahona, then ferments the mash in open pine vats for seven to thirty days. Two passes through a copper still finish the job.
A group of friends started Mezcal Amores in 2010 after travelling through Mexico's agave-growing states. The company still gives a share of profits to sustainability projects. It also plants ten agaves for every one it harvests. Drink it neat in a small glass, or build a mezcal Negroni around it.
