About
A rare Chilean white from Chasselas, the grape growers around Itata call Korinta. Seven months on skins turns it savoury and textural, with light floral lift, citrus, white tea and a saline finish. Unfined, unfiltered and made in tiny volume.
The fruit grows on a half hectare of granite soil at Quilaco in the Itata Valley. The vines are over twenty years old and dry farmed, sitting between 300 and 350 metres in a Pacific coastal climate.
Grapes are picked by hand and destemmed. Wild yeast ferment runs two weeks in tank. The wine then spends a further seven months on its skins in stainless steel, with a pass through neutral French oak before bottling. It goes into bottle unfined and unfiltered with a small sulfur addition.
Gustavo Martínez advised Itata growers from 2008 and worked two vintages for Luis Antoine Luyt before starting his own label in 2015. Around 900 bottles of this are made. Serve it cool rather than cold, with pan seared white fish, ceviche or raclette.
Producer note
Gustavo Martínez makes natural wine at Florida, which sits in Biobío but counts as Itata because of its granite soils. Every cuvée is a single grape from a single vineyard farmed by growers he has worked with for years.
