About
Envínate are a four-winemaker collective making some of Spain's most acclaimed wines. 'Lousas' is from Ribeira Sacra in Galicia — slate soils, Atlantic-cool climate, transparent Mencía.
The four winemakers behind Envínate met in 2005 while studying oenology in Alicante. Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez still run the project together two decades on.
'Lousas' is the local name for the slate these vines grow on. The old village plots sit on steep slopes between 400 and 600 metres. Everything is done the hard way. The fruit is picked by hand, trodden by foot, and fermented on wild yeasts with a share of whole bunches. The wine then rests in old barrels and concrete, and sulphur goes in only at bottling, if at all.
Open it now with roast chicken, pasta or anything with mushrooms in it. There is no rush, but no need to wait either.
