Canobolas Wines sits on the slopes of Mount Canobolas, between 775 and 820 metres above sea level, facing north-east for steady air drainage. The Cabernet Sauvignon comes from the vineyard's stoniest ground, where basalt shards and fine quartz sit close to the surface.
The Smith family planted this site in 1985, after searching widely for the right combination of altitude, soil and aspect. It's one of the older vineyards in the Orange region.
Canobolas ferments with wild yeast and keeps handling minimal through to bottling. Give the wine a few years in the cellar to soften, then serve it with lamb or a hard aged cheese.
