About
Whole peeled tomatoes from Campania, picked ripe, sorted by hand and put up in nothing but their own juice. No salt is added, so what you get is the fruit and how ripe it was when it came off the plant. Inserbo has worked with Campania tomatoes and nothing else for about forty years.
The company buys inside its own region and spends the whole year on tomatoes. The house range runs from San Marzano and Piennolo del Vesuvio, both DOP, through to Corbara, datterino, Agerolese and yellow varieties. This is the plain pelati out of that range rather than a named single variety.
Giuseppe Manfuso put up tomatoes in tins for thirty years before his son Gianluca took the business on. Gianluca brought in organic growing in 2000, now about seventy per cent of production, and started the Inserbo label with tomatoes preserved in glass. Whatever they pack keeps three years from the year printed on the label.
In the kitchen these want a short cook. Crush them into a pan with oil and garlic for a quick sugo, or leave them whole in a braise. There is no salt in the jar, so season at the end.
Producer note
A Campanian family firm, now in its second generation under Gianluca Manfuso, that transforms only tomatoes from its own region and put the Inserbo name on its glass-packed line.
