Hunter Semillon is the region's quiet speciality. Gundog Estate is one of the producers arguing it back into fashion. The house aim, in their own words, is intensity of flavour, balanced acidity and early drinking appeal.
The numbers tell you the style. It comes in at 10.6 per cent alcohol with a pH of 3.05, which is winemaker code for picked early and razor fresh. Low alcohol and high acid are also what let Hunter Semillon age so well. Over the years it trades fresh citrus for the deeper, softer flavours old bottles are loved for.
Drink it cold and young with oysters or sashimi, where the acid does the work of lemon juice. Or hide a few bottles for three to five years and open a different wine entirely.
